Vanilla sponge, filled with house-made blood orange compote, topped with a fluffy frosting lightly scented with rose water.
The tart and fruity blood oranges give a nice contrast to the light and creamy, floral frosting – and a small bite of marzipan on the side complements both. Making the most of the season’s fruits, we turned organic blood oranges grown in Italy into a fruity compote. Their juice was used to give a pink blush to organic marzipan, which was then shaped into petals and small roses – appropriate decoration to a Valentine’s day special.
